Our restaurant is alcohol-free by deliberate, operational choice – not a legal constraint, a religious requirement, or a temporary policy. This guide details why we made this permanent decision and how it shapes our dining environment.

This is the question guests ask most often when they visit us. Sometimes it is asked politely, sometimes with mild confusion, and often with the assumption that we must be operating under a sudden zoning restriction or a temporary resort rule.

The truth is much simpler: we chose to be alcohol-free. This philosophy has anchored our hospitality team’s approach from day one. Once you understand the logistics behind it, everything else about Kaio – the calm volume of the dining room, our complex mocktail program, the premium coffee setup, and the diverse crowds we serve in equal measure – falls perfectly into place.

The Genesis of the Decision

The reason comes down to the physical evolution of a dining room over the course of an evening.

A restaurant that relies on an active liquor bar changes rhythms dramatically as day turns to night. Watch a typical island spot: early dinner seatings are quiet and intimate. Then, as wine bottles open and spirits flow, conversation volumes climb mechanically. By 8:30 PM, the room is noticeably loud. By 9:30 PM, families with children are rushing out, and by late evening, the space has fundamentally shifted into a bar that happens to serve plates. The food and the natural view become secondary to the bar scene.

We explicitly wanted to build a room that maintains its identity from open to close.

Our independent hospitality group has been managing alcohol-free beachfront spaces since the original Hello Capitano opened on Gili Trawangan in Indonesia. When we expanded to open Hello Capitano Paje right here on the Zanzibar coast, it followed the exact same blueprint. When planning Kaio as a more ambitious, two-story Italian project within the grounds of the 55-room luxury Alaïa resort, we evaluated the concept again and definitively chose to remain alcohol-free.

The Room We Wanted to Build

We wanted a setting where a family can sit down at 9:00 PM for a real meal without competing with loud drinking culture, where couples on a romantic holiday can speak at normal conversational volumes through dessert, and where solo travelers feel completely secure and relaxed.

The only reliable way to guarantee that specific environment was to remove alcohol from the operational matrix entirely.

This is not a critique of traditional wine-serving establishments. Our team loves exceptional dining and appreciates a great vintage. Our policy is simply an intentional business model designed for the specific community we host on Paje beach, not a moral judgment on how others choose to operate.

When your profit margin cannot rely on marked-up wine lists or commercial cocktails, your culinary program has to carry the entire weight of the business.

Our Neapolitan pizzas and seafood pasta dishes must be excellent enough to stand completely on their own merits.

Our drinks cannot be basic, sugary sweet sodas or lazy “virgin” adaptations of classic cocktails.

Our non-alcoholic menu is engineered completely from scratch. We utilize fresh, locally sourced island fruits, house-boiled botanical syrups, and sharp herbal or bitter elements to create drinks that stand alone as complex culinary items.

Our coffee program follows the exact same standard. We operate a professional La Cimbali Italian espresso machine, utilize premium Italian-roasted beans, and train our baristas to pull flawless espressos, cappuccinos, and chilled caffè shakeratos from 7:30 AM to close. At the end of a long dinner, a perfectly executed espresso serves as the definitive finish to a meal.

Do We Cook with Alcohol?

We do not use alcohol in any phase of our food preparation. You will find zero cooking wine in our slow-simmered pomodoro sauces, no spirits hidden in our tiramisu, and no beer batters in our kitchen.

While classic Italian cooking traditionally relies on wine reductions, our kitchen has adapted to build deep, savory profiles without it. We rely instead on the natural acidity of premium imported Italian tomatoes, rich extra virgin olive oil, long-simmered stocks, and fresh local seafood delivered directly from the fishing boats south of the resort. The food doesn’t taste like it is missing a component; it is simply clean, ingredient-focused cooking.

This policy is not a marketing experiment or a temporary phase. Not serving alcohol is the core identity of what Kaio is. The reputation we have built across Paje beach – as a calm, high-quality, and completely inclusive space for active travelers, families, and couples alike – depends entirely on this operational boundary.

Introducing a bar program would alter the room permanently over time, and the serene, focused nature of the room is our entire purpose. Our policy is definitive, it is permanent, and across multiple years of operation on two separate islands, it remains one of the best choices we have ever made.
