Kaio is built differently. We keep specialized gluten-free flour and gluten-free pasta in stock at all times. Every single pizza on our menu can be crafted on a gluten free crust, almost any pasta sauce can be paired with gluten-free noodles, and a massive portion of our day-to-day menu – like our fresh local seafood, vibrant salads, and morning healthy bowls – is naturally gluten-free without any modifications at all.

An Important Note on Celiac Disease: While we take allergies incredibly seriously, Kaio is not a certified, 100% gluten-free facility. Our kitchen handles traditional wheat flour every day at the main pizza and pasta stations. Below, we outline exactly how we manage cross-contamination so you can make the safest choice for your comfort level.

Gluten-Free Pizza

Any option from the core Kaio pizza lineup can be prepared gluten-free. Our gluten free dough is made from a dedicated flour blend, mixed using separate kitchen tools, and hand-stretched away from the main flour-heavy pizza counter to minimize cross-contamination.

The crust bakes beautifully in our 400°C to 450°C Italian electric oven, giving you a thin, crisp, and genuinely satisfying bite that holds up to the regular crust – never a polite compromise.

Available across all of our lunch and dinner services, our kitchen keeps gluten-free pasta on hand in three classic shapes: spaghetti, penne, and fusilli. We can pair these noodles with almost any of our house sauces, which are naturally gluten-free, olive oil-based, or tomato-driven.

Every whole grilled fish, our tender octopus preparations, our garlic prawn dishes, the Tuna Carpaccio, Tuna Tartare, and Sea Bream Crudo are completely free of gluten.

Please note: Our Calamari Fritti and the Kids’ Fish & Chips use a light flour batter. If you are highly sensitive, please chat with your server about alternative prep for these specific items.

Note:

Our Mediterranean Bowl contains bulgur wheat, but our kitchen can easily swap it for quinoa on request.

Our Grilled Vegetable Platter, Stuffed Peppers, and thick-cut Cauliflower Steak are excellent gluten-free options. For a warm starter, both our Tomato Basil and Coconut Pumpkin soups are naturally gluten-free.
